The K is for Kresge. The Kresge's chain of low-price department stores moved to the K-Mart name and model when they wanted to modernize their image and merchandising.
Kresge's was later bought out by Sears.

It stands for Krappy, which was originally Krummy. They also had to choose from Kruddy and Korny.
