Because it allows you to see trends in data quickly and easily, without having to evaluate each data point individually.

Line graph shows the relationship between two variable,

It shows the kind of relationship, ie whether it is a direct or inverse relationship, a linear or non linear (curve) relationship and whether a trend is rising or falling.

It also shows the accuracy and strength of the relationship, ie how well the points fit the graph or how accurately we can predict one variable from the other and how much a change in one of the variables affect the other variable..

Also, because a graph line is drawn though the middle the points it represents their average, and values read from the graph are more accurate than the individual points.

The line can also be extrapolated (extended) beyond the range of the points to show us what happens in regions we did explore, although this must be done with caution,ie we should not extend the line too far..

They help to figure out trends, say if the temperature is rising etc. It will be difficult to make it out from numbers.
