Everyone who has answered has a great list of authors - I'm even going to add to my list! Based on the authors you've mentioned, here's a short list I'd try:
Orson Scott Card - Ender's Series (I ALWAYS recommend him! If you want, go to hatrack.com and click on osc stories; there are some short stories there you can read)
Douglas Adams - Hitchhiker's Guide to the Galaxy (if you like Terry Pratchett, you might enjoy this one! Neil Gaiman wrote the Companion version)
Brandon Sanderson - Elantris (This was a recent random pick for me and a surprise)
Ursula LeGuin - Earthsea (Since you like Piers Anthony and Mercedes Lackey)
Larry Niven - Ringworld (If you liked Piers Anthony's Mode Series, you might like Ringworld but its more hard sci fi)
Christopher Paolini - Eragon (I just put this in here because I'm currently re-reading this for the 4th time!)

You're already two of my favorites, Neil Gaiman and Terry Pratchett. I'd reccomend Peter Beagle (The Last Unicorn), Tolkien (LOTR), Robin Hobb (Assassin's Apprentice, Liveships). There is a series of altered Fairy Tales, called "Snow White, Blood Red", "Black Swan, White Raven", and lots of others. You might find an author you enjoy in the collections. I reccomend browsing at your library, check out what looks interesting. A new book that was kinda cool was "The Stolen Child", by Keith Donahue. Have fun!

I agree with Anne McCaffery's Dragon Riders of Pern. Excellent series! I also really like Melanie Rawn's Dragon Prince series, also excellent. Those are probably my two favorites.
Another series I liked was Robert Jordan's Wheel of Time series. It started out good, but the most recent book or two in the series have been a little slow. Hopefully the next one will be better.
I've also read a couple of Mithgar novels by Dennis L. McKiernan. They're pretty good, too.
