Not all movies are released on a Friday, but the date of the release can boil down to money. The weekend allows for the most people with time off and likely to have just been paid looking for something to do. A Wednesday release could be due to a holiday the next few days (allowing more time off for most people), avoiding another movies release on a Friday (allowing some time to generate money without a bigger competition), or it could be big enough that it will fill up the theaters and thus the extra days will allow extra revenue.

Not all movies are released on fridays, at lot are because people go to movies on the weekends more than they do during the week. Friday night is considered the begining of the movie goers weekend therefore studios release movies mostly on fridays. You will notice that on holidays like say Thanksgiving which is allways on a Thursday studios will release a movie(s) on wed. the day before, but the bottom line is marketing, money and first weekend box office sales. Studios love holidays that fall on fridays because then they can release a movie(s) on the thur. right before the holiday and have one more day to get a bigger first weekend box office total. Most movies make the largest amount of money on their first weekend of release.

A movie that has a big opening usually does better than one that has a small opening. Mor people go to the movies on the weekend so the way to get that rush of people out to see your film when it opens is with a weekend showing. Especially in the case of a movie like Mummy Returns or Snakes on a Plane, word of mouth killed those films so they needed to get as many people in the theaters as possible before the crowds were aware that the films sucked.
