If absolute reachability is essential, mesh is the way to go. But it's extremely intensive to set up and maintain. For normal operations, star is by far the most commonly used. The limitation with star is that if connectivity to the central hub is lost, everything comes to a halt. With mesh, only the site that lost connectivity is unreachable; everything else continues as normal.

Mesh encompasses star, star is just a better wired physical setup of a Bus topology.
