Platoon. Most realistic, most war oriented (no detracting tangential subplots or, in the case of Saving Private Ryan, war isn't the secondary plot but primary message), most loaded and adept actors, and most difficult to watch for those still living that participated in the relevant examined war. Full Metal Jacket is the most surreal and stylized so good in a different way, but not the best.

my all time favourite is From here to eternity which is a classic!
Others worth mentioning are Band of Brothers , Saving Private Ryan..I'm also putting in Star Wars (first three sequels) as the best inter-galaxy war ever!! hehehehhh...
