The areas where people lived were most likely to be accurate--because people were there--they knew what the area was like. The farther away from towns you got, the more you were --out there--in the wilderness, where God only knew what kind of animals and monsters lived.

Land surveying has been around for a very very long time. Also, the information put down on maps of land could be verified on the spot and very accurately. Most maps showing coastlines of not very populated areas were done from the decks of passing ships--while the ship kept passing, possibly never returning to that spot for verification. The problem with examining something from only one perspective is well perspective. For example... imagine two cars parked in a parkking lot. Now park one car to the side of and behind the other car. Put say a good twenty feet in between them. Now, from the front walk away about a hundred yards. Turn around and, if you didn't know their relative positions, try drawing an overview of their locations. You would draw them with the front bumpers being even since from that perspective they would look even. This is the problem of trying to draw things like coves in a cosatline from the deck of a passing ship out at sea.
With the ability to plot out positions of walls, streets, intersections, etc after measuring from different perspectives, a very accurate map of a city or town can be rendered.
