I've never owned a fuel injected car, but I've had this happen on my carbureted cars and it's never the same thing twice.

My guess is that it's either vacuum related, or something electrical. I'd have to poke and prod and try this's and thats's to figure it out.

That's why I only own "insert tab A into slot B" cars.

You can't "see" the on-board computer work, so you can't diagnose or fix it.

Ya know what, I lied. I did own a fuel inj car once. It had the 3.1 V6, but it was an earlier year than yours.

Evidently they're still junk.

Being fuel injected, it is entirely possible that one of your fuel injectors has either quit working, or is leaking fuel into the combustion chamber. Also, the seal around the fuel injector could be causing a leak. There are many possible causes for the rough handling of your engine, but the afformentioned is a likely problem. I would recommend taking it to a mechanic to be thouroughly checked. If your injectors are leaking, you could end up flooding the cylinders so badly that the car won't even turn over. (I know, it happened to me). Good luck!

I had this problem. I don't know what it's called but it's a little black rubber piece under your hood that's shaped like an L, I think. It's some kind of joint that's damaged and it collapses on itself. It costs like 45 cents to replace or you can put some tape around it.
