To give the little seed the energy it needs to grow, of course. Fat is the most efficient way to store energy. It would have to be twice as big if it depended on sugars.

Lipid give more energy when broken down as compared to starch. Seed needs lots of energy during germination, so lipids is the best choice.

Lipids are storage forms of the nutrition that seeds need during germination, as seeds cannot perform the act of photosynthesis(due to obvious reasons), they need this stored energy for the growth of the underlying embryo, when the conditions are favourable for germination

It's either energy for sprouing plant or a reward for the animal that gathers and moves it.
