None of the examples you gave is evidence of the Earth's shape. The sinking of ships cannot be used since ships are miniscule compared to the size of the Earth. Lunar eclipses might be used as evidence, but the outline of the Earth's shadow is fuzzy at best. The North Star is light years away and it is not about to give evidence as to the Earth's shape. Evidence might be obtained from comparison to other planets, such as Mars and Venus, or to the moon. Space shots of the Earth are very convincing lines of evidence. What more evidence does one need?

The best evidence of the earth's shape comes from the fact that the sun appears at different angles in different latitudes at the same time - this could only be the case it the earth were round
