It really depends on what type of work you do. The biggest industries are: tourism, government, healthcare, and construction (you know, rebuilding). The city really needs qualified skilled workers such as electricians & plumbers. In addition, there is great demand for clinical healthcare workers, like nurses, LPNs, nurse assistants, Rad Techs, etc.
The largest employers are probably Tulane University, the city of New Orleans, Entergy (only Fortune 500 company in town), and some of the hotels and hospitals. You can find more information at http://www.neworleanscitybusiness.com/

There is a construction boom in New Orleans right now if you want to do that.
Other than that, New Orleans is a nepotistic cesspool of corruption. If you are not related to a politician, don't bother wasting your life there.
I lived in New Orleans' suburbs for four years, I am more than qualified to say that.
