surface tension, adhesion/cohesion, the relatively high boiling point (some of this is infuluenced by hydrogen bonds.. oops)

1. It stays a liquid at room temperature (hydrogen bonding)
2. It readily disolves in other polar compounds like alcohol

Cohesion, and it's also the universal solvent...there's also surface tension.
