Leave the valve at the wall alone! No need to close it. Just find the rectangle box near the bottom of the tank. There's a knob on the top, says "ON, Pilot,OFF".
"Robertshaw" control, turn clockwise from the on position past the pilot position to the off position.
For relighting, remove 2 doors, outer and inner, light a match (you may need a fireplace or other longer type), place match next to pilot, turn knob to pilot position, hold red reset button (next to it) down 'til pilot lights. Continue to hold button down for 45 seconds. Release button, replace doors, turn knob to ON position. Hot water in about 30 minutes. "White rogers" control, you will need to stop at the pilot position and push the knob down to turn it off. AND, you will have to hold it down in lieu of a reset button for relighting. There are instructions on the tank, but, I bet they are covered with an external insulating jacket. Also, most of the natural gas companies will do this for you at no charge, just a phone call away.

Ther should be a square box on the bottom of you water heater.It should have a plastic knob.There will be embossed words that should say "off", "light" ect..Before you turn the knob,find the "Gas cock". It will be brass colored with a red lever.It should be in the gas line itself,near the water heater,turn that off FIRST and allow the flame (pilot) to burn out.then you can turn "off".Do the reverse to turn it back on,making sure knob is on "light" or "start" ect.

why do you want to turn it off? go into an appliance store and let them show you how to do it. you need to know that if you put out the pilot light you have to turn off the gas, and then be careful turning it back on again, let a professional help you.

your gas line will have a cut off valve located next to the heater just kill the gas to the water heater

Turn the thermostate to off. That is the thing you use to set the tempreture to or you can turn the main gas valve to off which is inline of the gas pipe. when the gas valve is cross ways from the pipe it is off.
