Here's a really easy and fun one:

Get two cups of water, put a couple of drops of food coloring into each (different color for each cup), then get a stalk of celery (a big one with the leave still on it. Cut the celery from the bottom up (through the middle of the stalk) just enough to be able to spread it apart and stick one end into each cup. Let it sit for a couple of hours and you get multi-colored celery (you can even still eat it if you really want, as long as you used eatable food coloring).

The experiment shows the vascular system of plants.

What you need:
1. Fresh Lime
2. A penny (copper one cent piece)
3. A small nail
4. Headphones

Step one:
Insert nail halfway into lime.

Step two:
Insert penny halfway into the lime, near the nail but not touching the nail.

Step three:
Place the jack of the headphones touching the nail and penny at the same time and listen to the faint electrical charge that's coming from the lime, you might need to rub the penny with the headphone jack while still touching the nail.
