Lots of flowers are edible, they just don't taste as good as fruit. Fruit is the result of a pollinated flower.

Sort of like the difference between an egg and a chick.

The flower has the parts that, if fertilized, will BECOME the plant's "offspring" (fruit or seedpod, or whathave you). The fruit is the result of a fertilzied flower.
