It's due to the Doppler effect. The same effect that causes the change in pitch of the noise of a car passing you.
If it is moving towards you then the frequency will be higher (blue)
If moving away then it will be lower.
Most, if not all stars are spinning so one side will be moving away and the other will be moving towards you.

If you're referring to the "stars," they all twinkle red and blue. Most of them are so faint, you just can't notice it. It's a phenomenon known as Doppler shift. The stars are either moving away from us or towards us. If they're moving away from us, they give off more red-light spectrum. If they're coming towards us, they emit more blue-light spectrum.

I thought the Doppler effect made some objects appear to be red and it is something to do with different frequencies of light travelling at different speeds (obviously) causing white light to break up a little over large distances - but I don't fully understand it to be honest

gasses in the universe cause the stars to sparkle. And the planets stay BRIGHT !!! All the time without sparkling at night like mars & venus and Jupiter out there from the reflection from the sun. Well ya and the moon, its so close to us..
