Seriously, do they just do it in the spinach fields or what?
Really, I want to know; because maybe the poops got into the spinach fields by that?

That is standard in organic farms. But in regular farms bad hygiene (not stopping for washing hands after going to toilet because they are paid for amount of spinach picked) is still a problem.

Maybe they take care of their business before coming to work. There are systems you can use to regulate the timing of bodily processes.
