i have traveled on both going to Sydney then onto Melbourne a few times also the newl which i prefer over the other 2 if going to Melbourne.but if only going to sydney-brisbane the coast hwy is pretty good in most places

The Pacific Hwy is the busiest highway in Australia, and does get very narrow, and slow in some sections if you are travelling along it during peak times. Having said that, some of the sea side towns along the way are well worth stopping in at if you're interested in that sort of thing.
The New England Hwy is a lot straighter (once you cross the mountains), and the scenery is still just as spectacular, but a little different, consisting of cattle & sheep country. There are some terrific national parks & look outs near this highway along the way as well, and the towns along the way are pretty little inland towns, full of older buildings etc.
So, to be honest, it comes down to personal choice. Personally Id pick the New England Hwy just because I live along the Pacific Hwy, and see it quite often, so it'd be a change of scenery for me.

If you're going Sydney-Brisbane I'd take the New England Highway without hesitation.
Pacific Highway is more scenic with prettier places to stop but it is a horrible road with fatal accidents nearly every day, suicidal drivers and enormous trucks that tailgate!!!!
I can say with absolute certainty that I will never get on the New South Wales part of the Pacific Highway again.
New England Highway offers smaller country towns like Tamworth, Armidale, etc, which are nice in their own way but still not near the beach!!!
But on the Pacific Highway you'll be so preoccupied with staying alive that you won't have time to notice anything.

New England for a fast, safer trip. Pacific for scenery and slow.
If you do the Pacific dive off here and there, like the Lakes Way near Forster, or from Kew to Port Macqaurie, or from Ballina up through Byron Bay. The highway itself is not that exciting. These diversions are not much slower and a lot more scenic.

the Pacific Highway (costal) is good. A few good places to do and see a lot of things. I travel from the Sunshine Coast (north of brisbane. 60 mins) to Sydney all the time and I always use the Pacific Highway. Good places to rest (from north to south) are Ballana, Coffs Harbour, Raymond Terace/Newcastle and obviously Sydney. it takes 16 hours to go from Brisbane to Sydney or you can do a overnighter (advisable). There are FREAKS on the road at night on the the Number 1 highway on the east coast

The coast road is more scenic and would be my choice.
You don't say how far north you are travelling but there are many beautiful towns along the way to stay.
Port Macquarie, Coffs Harbour, Sawtell to name a few.

Gee, I don't know which direction you are coming from but, I would like to go up the coast and down the interior. I wouldn't want to miss all that fall foliage and festivals. What a glorious trip.
