I need one that should be simple but quick, to record several voice files in MP3 format. I will record several words and phrases, so I need something where I can record and save quickly.

I use Audacity, It records everything,Including whatever comes out of you speakers!

If you are using windowsXP, it has built in sound recorder, and can save the sound files in many formats including mp3.

All programs > Accessories > entertainment > sound recorder
First Record. Then use save as dialog.
In front of format there is a button called change. Click on it. From the list select "mpeg layer3"
Type in the name box
"filename.mp3"
Write any name and add mp3 extension to it and add double quotes.Your audio file will be stored as an mp3 file, and can be listened as mp3 files.
