First of all, it wasn't Skymir, it was YMIR.
And I quote,

Bur's sons is a reference to Odin and his brothers Vili, and Ve, the three of whom fashioned the world from the body of the slain giant.
As for the creation of humans, that ws done by, Odin, Hoenir and Lodurr. The found two trees, Ask (Ash), and Embla (Elm) and fashioned them into the shapes of the first human man and woman, then each of the three gave them the gifts of life, and I quote,
"To the coast then came, kind and mighty,
from the gathered gods three great Aesir;
on the land they found, of little strength,
Ask and Embla, unfated yet.
Sense they possessed not, soul they had not,
being nor bearing, nor bloomihng hue;
Sould gave Odin, sense gave Hoenir,
being Lodurr, and blooming hue."
Skymir was a giant, but he is quite different from Ymir. Skymir was a giant that Thor and Loki encountered on one of their journeys.

The first man and the first woman were created from the trunks of ash and elm trees which the sky gods (Aesir kindred) Odin, Honir, and Lodur found on the beach. Out of the same material that formed the essence of the world structure, the gods made people with life and spirit.

Vé gave them clothing and names. The man was named Ask [Ash] and the woman Embla [Elm]. Ask and Embla are the ancestors of all humans in Midgard.

Spare parts! Nobody's using that appendix thing. Not even Skymir. There were plenty of stem cells left over to fiddle about with. A little toe here, a thymus gland there, pretty soon, you've got the makings of an amusing little hominid before you know it! And pretty darned inexpensive too.
