I want to copy a number of freeze dried products and re-market them under my own brand name.

Why would you want to do that ,it's not fair to trade on someone Else's success. Be brave and market them under your own brand if they're any good they' ll take off OK, If you do copy and alter you still stand a chance of being dragged through the courts.

You would have to buy a licence from the company that owned the product copyright or patent.

It would be Patent laws not copyright laws.

You need to license them or find those that have expired or will expire soon.

Patents only last for like 20 years.

So long as you do not sell them under the current vendor's name or use a patented process without a licence there should be no problem. BUT can you do it cheaper and better?
