Well, it depends on what shape your pouring and how close to the pour site you can get the concrete truck to it.
If you can reach the site with a concrete truck, I'd say between 2 and 3 people.
If you have to wheel barrow the concrete to the site, then add another 2 to 3 people. This is the same if you are mixing the concrete on site instead of using ready mix.

I just helped pour 15 yards a couple of Saturdays ago. There were 5 of us so by dividing I come up with 1. In reality You probably need at least 2, one for the wheelbarrow and one to rake/level. 3 would be even better because one could rake while the other leveled.

If it's poured directly from the cement truck or toted by wheel barrow, it can vary considerably.
As for pouring....it's pretty simple. Takes one man to aid the stuff down the chute.

Spreading is the real work.

If you are backing the concrete truck up and dumping then 2 laborers and one finisher.
If you are mixing by hand, then 2 laborers with wheelbarrows, one laborer mixing and one finisher.
