Eat mishti doi and cham cham (or any other sweets) from Ganguram, eat some 'desi' Chinese food at one of the many Chinese restaurants (Mainland China?), go shopping for cotton (dhoniakali or tangail) sarees, salwars kameez and kurtis, buy darjeeling tea from New Market, check out the A/C market for latest fashions and jewelry, look for second hand books at College Street (you might find some very unique ones!).
And finally, if you dare - eat 'puchka' from a street vendor!

If you go to Sudder Street in the downtown area, at the opposite end of the Salvation Army, there is a huge red brick building called "New Market." There, they have everything you could ever want to buy from India, including jewelry, housewares, chess sets, etc. Make sure you do a lot of haggling. They will try to JACK YOU UP, and just know that they will ALWAYS go lower. You may have to walk away from them 4-5 times, but you'll spent 10 times more haggling than you will actually shopping.
