"Launching" a ship is a perfectly good word.

If you are talking about the ceremony where they break a bottle of champagne on a ship before the first voyage, that's called "christening" the ship.

There's not a particular word in English for that phrase. Usually, when someone has a face that could launch a thousand ships, it's usually means the ships are all trying to get to the face/goal,

I guess someone who is hideous could launch a thousand ship..........all to the effect of getting the (blank) out of Dodge City, LOL
