In American Co-Masonry (Freemasonry for women and men) we are a bit more esoteric and some find us irregular because we admit women. We stem from the French Grande Loge Symbolique in the 1800s and as such we have kept many of the things discarded in later "improvements" in Freemasonry. I cannot speak for any other Order, only my own.

Yes, we use Tracing Boards. I think they help enormously. In fact, we are encouraged in our studies to design our own based upon the classical ones.

I will go you one better, we also sometimes make our own working tools. Now THAT demands concentration and lends meditative work to our speculative art.

As far as the number of each, I leave that to your exploration should you decide to join an Order.

Yes we use tracing boards in America especially for the FC Degree. They are used best to help illustrate the symbols you would have seen during the degree.
