and if so, how do you like it prepared? I ask this because eggplant is the one and only food I can think of that I do not like (oh yeah, and Okra)

Hi Basketcas, Eggplant is okay,I beat 3 aggs and some milk into to a medium bowl,set aside until you need it..And i get a plasic bag,and put flour in the bag,and then season the flour with season salt(don't over to it with this season,get has alot of salt in it)and add pepper to your taste.Next drip your round sliced eggplant into the egg,and milk,and put into the bag of flour, and shake it until the eggplant is coated in the flour mix.Next deep fry the eggplant,and when it turns a golden brown,they are none.Not to bad if you fix the eggplant like this.You be the judge,and try them.Enjoy.

That goes for me,too. The only good thing about eggplant is the pretty purple color. And I'm not into gumbo, either so xnay the okra!

I love eggplant. Okra i'm not really crazy about but when in the southern states have it french fried on perhaps an appetizer platter. It's sort of stringy for my taste.
Eggplant I love to grill in the summertime. Wash it, slice it, season to your taste and grill it like a burger.
My family enjoys it dipped in egg, dipped in very fine cracker crumbs and fried in butter on med heat till golden brown, Salt, pepper and garlic are the seasonings I use when preparing it that way.
We also enjoy it with marinara sauce, baked and seasoned to taste, topped with marinara and the cheese of your choice.
Alot of people just don't like the name of the vegetable and have never tried it. Squash lovers will surely enjoy it.

Eggplant sliced, dipped in beaten eggs, then crushed crackers and fried in butter, is delicious, I like to put ketchup on it. Okra is also very tasty!
