I think that's possibly the best question i've ever seen on here, haven't got an answer for it though, sorry!

maybe because its the same as saying they're in a deep sleep. if someone is fast asleep, we probably use fast because they have probably been asleep for a while.. or because they're not in an early stage of sleeping

If someones being tired at work, you can sleep fast. Or do one thing at night , keep your eyes closed breath softly inhale and exhale for as long as you can.
