There are so many to choose from and it also depends on where you want to go.
I stayed at Tryp Habana Libre in Havana which I liked. It has a lot of History because it was the there that the revolutionaries stayed after they took Havana.
It was the Hilton before the revolution.
In Havana, you also have The President Hotel (which is very beautiful) and the Melia.

In Varadero, I stayed at the Barcelo Marina Palace which is one of the most beautiful hotels I have ever seen. It is quite recent and the people, food and the accomodation are great.
In Varadero you can also try the Paradisus (has a beautiful lobby) and the Melia Las Americas.

My opinion: don`t choose older hotels...

My wife and I stayed at the Melia Cohiba which is a five star hotel.
The ocean is just across the road and on the other side of the building you can see old Havana as far as the eye can see. Four blocks away from a large outdoor market. The hotel is modern and has a night club and several restaurants.
There are many other nice places in the old section of Havana but lack the swimming pool and A/C.
