Francisco de Montejo and his son of by the same name. The father failed in his attempt but his son established Merida and Campeche in the 1540s. The Yucutan conquest took the conquistores a long while to fully conqueror probably due to the Maya's decentralized state being that their civilization was already in decline.
In contrast The Aztecs conquerored by Cortes and the Inca conquerored by Pizarro were more centralized. Cortes and Pizarro had more immediate success by striking at the head of these empires.

1511 was the date of first contact, by Brother Gerónimo de Aguilar and Seaman Gonzalo Guerrero, who were shipwrecked off the coast, but nothing was conquered or destroyed at that time. Looks like the first successful attack was in 1519 (see the timeline on the first link below).
