A couple of differences -
After you remove the allen bolt and drain the oil, the fork tube will slide right out of the fork leg with no resistance.
You'll need a seal puller to pry the seal out.

When you put the forks back on the bike and tighten the pinch bolts, then tighten the bolt at the top of the forks.

Rebuilding is a technical skill needing the right tools and reference materials. 24 year old forks probably need to be scrapped. The cost to find original parts will be difficult. If you have to simply change dust and oil seals the work is simple. Rebuilding is a complicated guessing game for a novice given the problems may involve tubes being bent, 'out of round' or corrosion set into the micro plumbing system. Parts are worn or blocked hydralic valves or other small problems in the sysytem. Rebuild if you have no choice, replace with a newer used set (better designed) or cross reference whose bikes also use the same lenght and diameter forks. Modifiers use off the shelf that work.
