Jason Becker til he came down with ALS. He and Marty Friedman played together in Cacophony. Marty is still a helluva shredder if he wants, but plays more mellow exotic stuff on his solo work, and more traditional metal in Megadeth.

all the above are great guitarists, and its more of a personal taste in the music you like but most of them don't shred (well, Eddy Van Hallen does, just listen to eruption). one person I'd add to the list is Zakk Wylde, Ozzy's current guitarist... listen to live at Budokan
