Luxor is an amazing city. But, it all depends on your interests. People either find it extremely interesting since Luxor alone has almost 1/3 of the world's ancient monuments, while others find it boring because it is not exactly the clubbing capital of the world.
First of all, I strongly recommend you go on a Nile cruise instead of staying in a regular hotel. Why? because the nile cruise is breathtaking. On the boat, you get to meet more people and make friends because you all go out together on the tours, eat at the same time etc. There is also entertainment at night on all boats and that should keep you busy.
In terms of what to see, I am sure your tour operator will keep you busy visiting the valley of the kings, Luxor, Karnak temples etc. But you should go out to the market and checkout the stuff, you can go back with tons of great gifts.

Stay at the Winter Palace Hotel or the Movenpick on Crocodile Island, the Sheraton is a bit down market. There will be plenty to see in Luxor such as the Temple, Karnak ( the sound and light show is impressive) and all th places on the west bank such as the Valley of the Kings. You can also go on a hot air balloon trip there.

if you are really planning to have vacation in Egypt, you should have told us how many days you plan to spent there!!! for ex: if you have 2 weeks of vacation, you can have 1 week in Nile cruse and 1 week in Cairo or on the red sea(sharm, hurgada or marsa alam or El qusier)... but if you are planning for 1 week, i think Nile cruse will be more fit... any way with Nile cruse, you have to be care full with mosquito's(it carry no illness, but it hurts and makes you uncomfortable)... also do not be scare from people, just be friendly with them and you will feel so special guest between them...

TAKE A SMALL RUCKSACK FOR EVEY DAY THING CAMERA AND HATS AND A FLASH TO KEEP THE WATER COLD
