There use to be a diner called The Purple Cow in Scranton, Pa. In the '50s my grandmother and I always at there after shopping at the Scranton Dry Goods. There was a poem on the wall in the diner:
My love she is a purple cow.
Her life's an open book.
Her eyes are blue,
Her heart is true,
And oh, how she can cook.
Incidentally, I don't see how a poem can start with "my love's a purple cow" and end with "I never saw a purple cow". That is not logical, and I suspect two different poems have been confused.

The Purple Cow was a coffee shop in the Jayhawk Hotel in Topeka, Kansas in the 50's. The poem was on the wall.
