yes you can. few things to consider....vapor barrier (waterproofing) for humidity build up behind the stone veneer and drainage. The water will get behind the venee and it needs to get out through a weep hole at the bottom rof the wall. Otherwise it will find its way towards the inside of the wall and your interiors causing mold growth and other undesirable situations. You also need to keep the sheathing around the area for structural stability.
