Quinces make the BEST jelly ever. Wash them and cut them up coarsely ( you dont need to peel or core them) and put them in a pot to boil with a couple of cups of water. When they are very mushy (they start off hard like apples) take a jelly bag or some cheesecloth and tip it all into the bag and let it drip through into another pot. DO NOT SQUEEZE the bag..it will make the jelly cloudy. Leave overnight or until all of the liquid is drained off. Discard the flesh and pulp. Take the juice and add one cup of sugar for each cup of juice and boil until when you put a little of it on a plate with some iced water on it...it gels and wrinkles and solidifies. Take it off the boil and pack it into clean warm jars that you have had warming in the oven. Cover the jars and leave to cool. It makes a beautiful pink jelly that tastes marvelous. My mouth is watering at the thought of it. Good luck! BTW you dont need pectin...quinces have enough of their own.

1,5 kg quınce, 1,5 kg sugar, half lemon, 125 gr. walnut
peal the quınces and take out the seeds and dice them up.pop them in water and boil them. rinse and mash them.put sugar on it and heat until it melts with sugar after melting add juıce of the half lemon and transfer to a flat bowl, spread it out and put it in fridge for 60 minutes.when you take it out from fridge it should be hard. serve it by cutting in into squares,top them with walnut crust.
