ok the Jedi was rather unfair using a light saber... let him use something else then... like a walking stick or something.

The power of the Jedi is not in the lightsaber. A strong Jedi would not even need the walking stick - the power of the Force would be more than enough.
Excluding the Jedi, in an unarmed fight, likely the monk or the ninja. In an armed fight... it's a toss-up. The hoplite tended to work best as a group, so there's a disadvantage there. Given comparative weapon and armor, it'd be down to the knight and the samurai. Who wins in that match is a test of skill.
