Sometimes I get so thirsty at night that I dream about having a great big glass of ice water. So yeah, sometimes I do get up and have a drink at night.

Yes they do.
In Chinese medicine the various organs are treated as having meridians attached to them. The liver meridian controls our general drive and distribution of energy in the body. When it is overactive there can be too much heat in the body and you feel over anxious and want to keep doing things even when you should rest (unless your spleen meridian is also overactive and then you just feel frustrated but can't do anything much)
I am prone to both these things and I know that when my liver is up I just CAN't drink enough water. I drink all day and before bed and still wake in the night to drink more, yet I am always a little dehydrated with very yellow wee.
I think it isn't necessary to know about chinese medicine to be affected by the things it describes, so, sure I think many people also would have the same issue.
(pretty long and random answer, but there you are!)

interesting question, as a matter of fact, it got me thinking... i never wake up in the middle of the night because im thirsty. when you're asleep, your brain blocks the feeling of thirst and hunger, i dont know whats the scientific basis of this but i know this is a fact. i have the habit of drinking a glass of water before dozing off, but most of the time i directly go to bed without drinking, neither of the two instances would wake me up from sleep just because i need to quench my thirst... i guess it just happens in the movies, horror/suspense movies to be exact. the only thing that wakes me up is when i get a bad dream, when the temperature's at its extremes (too cold or hot), and my alarm.

Yes, some people do wake up to get a drink of water, my ex. did this every night , I got use to it . she just felt thirsty, she wanted a glass of water by the bedside but I told her it will not taste good . So she got out of bed and went to the kitchen.

Yes. Sometimes we sleep with our mouths slightly open and that causes dryness. But I don't get up to get a drink of water. I keep a bottle of water by my bed -- saves getting up.
