Real bamboo dies if the roots get waterlogged. What people sell as "Lucky Bamboo" is not really bamboo - its dracinea, and that's what people have stuck in water.
Real bamboo should be planted in a pot or other contained area with good drainage. You can fertilize with grass fertilizer, since it is really just a giant grass. How much sun depends on the kind of bamboo you have. If you plant it in the yard, most kinds will take over the yard.

Real bamboo plants are in the weed family, the bamboo plant is therefore very hardy and will spread like weeds all over your yard and beyond. If you want to contain the bamboo, plant it in a very sturdy large container, and care for it like you cared for your grass on your lawn, except for the mowing, you only need to water it.
Unless, you really were referring to the "lucky bamboo".

From what I understand they are very hearty plants that if you plant in your yard will grow fast and thick with almost nothing including a hard freeze, able to kill the plant.

People are not aware that bamboo is a weed.
Leave it alone.
It may move around but it will never really go away.

Some people have them on dirt, we have ours in water. I bought a pump to suck the water out, clean it (because of the dirt) and put it back in, works beautiful!! they're lovely plants!
