I mean in "Click", does anyone really think that in the real world a chick as hot a Kate Beckinsale would be with a guy like Adam Sandler. And in "The Benchwarmers", would Molly Sims really be with Rob Schneider?

Movie producers don't do anything without a focus group. They do extensive research and find out what people will pay to see, then they make it. So the answer to your question is simple. They do it to make money.

Honestly as a pretty hot girl myself, you go out with a bunch of hot guys and they are shallow and don't really care about anyone but themselves. But a average guys with humor, brains and the ability to love you for everything you are, not just how hot ou are naked is what makes girls fall for average guys all the time.
Besides these are movies, and they have to make them what people ( men) want to see and sex does sell. Look ate the TV shows King of Queens, he is an average Joe and his wife is hot but love sells to female viewers. But maybe I just think to much about it.

It is because movies are fantasy. They are suppose to be for escapism. There are many average Joes in real life who love the idea of getting the hot chick, except that new Vonage commercial. That guy is stupid.

Maybe the perfect combination in a comedy is a funny guy and a hot girl. Comedy sells. Sex sells. Why not incorporate sexy into a comedy the best way you can without taking away from the story line?

coz n movies the producer want the ppl 2 have fun watching the movie 2 make them come and pay for a ticket, and there is no butter attraction than a hot babe.
