Mostly they are monetary. A person may earn a bonus for meeting certain requirements or sometimes a bonus may be given at the holidays.
Other times incentives can be gift certificates or extra time off work. Sometimes it can be as extravagant as a trip. People then work towards set goals to earn these things.
Occasionally a business may donate something like a gift certificate and then all of the employees who meet the goal can have their name entered into a drawing.

Medical, dental, eyecare plans; retirement, 401K, etc; vacation, sick days, personal leave days, holidays, family health leave, funeral leave. Those are employee incentives.
