It seems to me that in our society, we tend to root for the bad guys more than the good guys. Case in point, prison break, or whatever that tv show is called... you are rooting for the bad guys, even though they were in prison for a reason.
Pirates also tended to lead the lifestyle most people dream about. Travel the world, riches and fame (For some, stockades for most), adventure, the ocean, it's a very romantic idea when you do not include the murder rape and pillaging.
Also, many authors have written extensively on this subject, again playing on mans desire for adventure and glory.
Movie companies are no better. They always portray the pirates as the heroes of the day, Pirates of the carribians or otherwise. Seldom have I run into a movie, if ever, that has shown a pirate for what he truely was, a murdering thief who prayed mostly on those far weaker than him and his ship.
From another perspective, you could ask, why do women like bad boys instead of the nice, loving nerdly types? lol, it's all the same!

Who do you mean by "we"? There are many people who don't love pirates.
However, here are some reasons to love pirates:
1. Johnny Depp (or another hott actor) played as a pirate
2. Ancestors may have been pirates
3. They symbolize freedom and adventure
4. They're cool
5. Many people root for the "bad guys" in movies

Because they have the freedom to grow their hair long and use bad grammar, and i am pretty sure they don't bathe or brush their teeth, and it never seems to be a problem for them.
