Some one that knows the menu, drinks and restaurant policies by heart. Also a person that gives superb customer service and that is aware at all times what's going on in the restaurant floor while working. Someone that communicates well and manges other in a professional manner, a leader. Last but not least someone the restaurant and employees under him/her can trust and rely on.

I'd want the head served on a bed of lettuce or kale, with some garnishes - perhaps a string of raisins around the neck and an apple in the mouth. Edible flowers in the hair might be a nice touch.
