Well you see a rock that just sits on the ground over time will waste away and have moss develop on it because the moss will grow up and around the stone. A rolling stone is always moving therefore no moss is growing around it, because it is not standing still wasting away. What the saying means is that if you keep moving you won't just be sitting there wasting away. It's called an analogy.

Figurative speech that praises the activity or movements of a person or thing. A noss covered stone has remained unchanged in order for the moss to grow.
Some people refuse to make changes. Often it is fear of failure. But in some cases even a wrong decision or mistake is better than inactivity as the course can still be adjusted. Just like a stone could roll in another direction... the worst thing is for the stone to remain stationary...then moss grows on it.

philosophically speaking:
moss is any substance that prevents growth
let's consider:
we are the stones
if we stay in the same frame of mind too long we become too comfortable or too lazy to move - moss will start to grow
if it's a bad place the moss consumes us and we cease to grow
if it's a good place we should feel we can always do better
keep that rock rolling

In order for moss to grow on a stone, that stone has to sit in one place for a very long time. If a stone is moving (rolling) then it wont be able to grow (gather) any moss on it.
Hope that works for you.

I agree with the first answer, in part. Sometimes it is good to stay in one spot, especially work. As far as the etymology of the phrase, moss grows on the north sides of trees and rocks that are sedantary (the north side here in Indiana and probably most of the northern hemisphere).

Basically, besides the literal meaning, it means that you pay for being on the move all the time by not being able to have any real roots or home. It can also mean that you're running away from responsibility.
