Big differences:
A valve job disassembles the cylinder head(s) only. Valve seats are reground, valves might be replaced, new stem seals installed, and possibly valve stem guides are machined. The head surface which mates to the engine block might be sanded or ground flat.
An engine rebuild completely disassembles the engine block and replaces or remanufactures pistons and rings, connecting rod bearings, timing chain, oil pump, crankshaft and main bearings.
Other steps usually includes cleaning the block, checking for cracks in the block, reaming and honing the cylinder bores, and milling the deck (top of the block where the heads are installed.) The oil pump and distributor might also be replaced or rebuilt.

A valve job requires only removal of the cylinder head....the main internals of the engine, the "bottom end" as they say, remains untouched.
So there is a HUGE difference between a valve job and a rebuild...you might think of it as dealing with perhaps 25% of the engine in parts and cost, versus a rebuild.
On a very high mileage engine, just doing a valve job isn't always a great idea.

a valve job is just removing the heads,,and doing the valves on an engine,,a engine rebuild is a complete tear down and rebuild and replacement of everything that is worn out ,this also includes a lot of machine work,also,,and very care full checking of all the main parts to make sure there as close to new as possible.this usually cost a lot,,and is only recommended,,when needed,,valve obs are done all the time,,its a cheap way to put back some of the cars power,,and also done a lot to stop a bad miss in one,,i own a repair shop,,and have done a lot of both,,good luck with it,,i hope this help,s..

A valve job is just redoing the valves in the head on the engine where an engine rebuild is rebuilding the whole engine.

in a valve job only the top part of the motor is opened up. The valves are removed.. the seats ground.. new valves and springs installed motor put back together... A rebuild strips the entire motor apart.. cylinders are honed, worn parts replaced... the difference... about $1000

Well a valve job is just the top end (heads) . And an engine rebuild is the whole engine, pistons, crank, etc !

A valve job is just on the top of the engine.A rebuilt is valves,crank,pistions,and I could go on and on.Are you sure it is not your lifters.Can you hear it or if its valves you will have low compression and burn oil.
