I LOVE STAR WARS!!!!! I love playing Battlefont 2 as well, howver, I play it on Xbox. And I have the cheat code for unlimited amo and god mode, so I can't die. Which makes it more fun, because you can rush in and kick *** without dieing. I also really liked Kights of the Old Republic for Xbox, never liked the 2nd one to that though...

Battlefront II is the hands down winner. Check out this classic http://www.videogamebuttons.com/xbox/game.php?gid=67945d3b61895de5f4e84af551c8c6d2 and live the Star Wars experience. This game gives you better command over the war than almost any top tier war game. Combine excellent game making with the Star Wars Galaxy and you have a classic.

It's a virtual tie between every game in the Dark Forces series, but if I had to pick a favorite, I would go with Jedi Outcast. For me, it just completely changed gaming. Prior to that, I was a really casual gamer, the only real "console" I had was my Nintendo 64 from years ago. I got Jedi Outcast as a gift, and I must have played it for thousands of hours, day in and day out. It had a fantastic single player campaign, and the multi-player was just incredible.

What, nobody for Jedi Knight or Jedi Knight 2?
I suppose it depends on what you want. X-Wing vs Tie Fighter is one of the best space combat sims ever although it looks very dated now.
KOTOR is an amazing RPG, and probably my pick for best SW game.
Battlefront 2 is fun, I've been playing a lot lately, but it just seems a bit lacking somhow.

Privateer, a spin off from the x-wing series
not a quite "star wars" but fun and darker
I think it was released circa 1993
but "tie fighter" plus its add ons is the better combat simulator

Lego Star Wars for any system. I wish they would make more Lego games. Like Lego Spider-man or Lego Lord of the Rings.
