Disneyland is your best answer. You can find really easy going rides. There is more to do for you there than anywhere else.

Here may be some good rides for you:

Fantasyland:
Peter Pan's Flight
Alice in Wonderland
Snow White's Scary Adventure
Pinocchio's Daring Journey

Adventureland:
The Jungle Cruise

Frontierland:
The Canoes
Tom Sawyer Island
Mark Twain and Columbia Boats

New Orleans Square:
Pirates of the Caribbean
Haunted Mansion

Critter Country:
Splash Mountain
Winnie the Pooh

Mickey's Toontown:
Roger Rabbit's Cartoon Spin

Tomorrowland:
Autopia
Star Tours

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Disney's California Adventure
(to go here you have to purchase a park hopper pass or a seperate pass)
Soarin' Over California
Tower of Terror
Monsters Inc.
The Orange Stinger
Grizzly River Run
Maliboomer
Happy Birthday!!
I took out all the shows... so the only thing left are the rides. There is also much more than I have listed.
You're 11, go to Knotts Berry Farm or to Disneyland. Both are great. Though given your description, you'll probably like Disneyland the most. It's got more noncoaster attractions that you'll enjoy, plus some great shows.
