we do that because greek coffe is a bit sore and hot and you need the water
i think it became a habit after that
and i think its good to serve water ,its an element our body needs
if you are not ok with that just say politely to the waiter not to bring you anywater
or if you dont want to pay for it ask the waiter to bring you "nero vrisis" which is water from the kitchen

Because greek coffee is very thick and rich, so it would be like ordering something very sugary you would need some water to wash it down with. It is also a higher level of service. So that you do not have to ask for the water they just give it to you.

If you order anything to drink or eat in a cafe in Greece you are automatically served a glass of water. Not just reserved to coffee. I presume it's tradition but usually find it very refreshing after eating or drinking, especially in the heat of the summer. Sometimes it's brought to you first, whilst you wait for your order.

its because greek coffee is not filtered its to wash the ground coffee out of your mouth if you swallow some. trust me my best friend is greek ,strange people

It's common in most of Europe, the coffee is so strong(and frequently gross) that you have to dilute it to drink it.

and please never order turkisch coffie in greece
