I'd be a bartender in an Irish pub. Singing songs and listening to people's stories all day long. Without a care in the world.

I would be a compost seller on a small scale. there is something magical about getting the mix just right to get the compost hot enough to kill the weed seeds.
I would also be an"adult onset athlete" coach wealthy enough not to have to take on any whiners.
I think that Tennesee would be a good place for all of this...
