The producers probably just wanted "Irish™" accents, and don't care which part of Ireland the people are from. It'd be like an someone wanting 3 people from England, and having a Scouser, Geordie and Manc picked, just because they're all English.

Because they are actors and come from different parts of the country hence the different accents.
