Here's a free pattern for an afghan
http://www.knitty.com/ISSUEfall06/PATTlizardridge.html
Version 1 is worked in blocks, so you could use your scrap yarn to make the blocks and sew them together. Make as many blocks as you need to cover a full sized bed.

If you want to make something without a pattern, do this: Try measuring your bed, and find the conversion of how many stitches it will take to make that size afghan. Then just knit however many rows you want to knit to make the pattern...depending on how much scrap yarn you have. If you have a small amount you may only want to do a few rows of each. It would be prettiest if each color were the same amount of rows in my opinion. Then just change colors. Thats if you want to make something without the use of a pattern. Here are some useful links:

The easiest way to use up those scrap yarns is to make at least
2 to 4 rows in one color and than switch to a different color and
I'd just knit one row and purl the next. Before you know it you'll
have a lovely striped unique full sized afghan. You might have
to have about 300 to 400 stitches depending on the style of wool
etc. Enjoy your project. I love to knit too.

I had the same problem recently, haveing a whole bunch of scrap yarn. Right after I learned how to knit (self taught), all I did was knit up a whole bunch of squares useing different stitch patterns and styles for each square, then all you have to do is sew them together. You can just look for stitch patterns and variations online print em' out and knit them up, it's a great way to learn new stitches without trying to tackle a complicated design. Here are some examples - cables, drop stitches, twisted drop stitches, wavy drop stitches, basket stitch, moss, garter, welting, stockinette, ect. You could even mix up stitches in one square. Good luck!
